Egg yolk is very different from gelatin, and although pieces of hard-boiled egg whites are sometimes given to turtles, the yolk is not. I wouldn't use it.
What exactly are you trying to make, and are you trying to use something to "hold" the ingredients together? If so and if you're going to cook whatever it is you're making, I'd use the egg albumin rather than the yolk (keep in mind that this will be a really high protein food if you do).
