I was just wondering, I feed my turtles pellets one day, green leaf lettuce the next, then nothing. Is this alright?

Well you should be feeding as much food as would hypothetcally fit in the turtles hollow head not including the neck. It actually sounds like you aren't feeding enough.

feed them pellets (size of head) and veggeies at the same feeding. Every second day should be good.

Feeding them a variety of veggies in addition to the green leaf lettuce would be good as well.
