I'm not sure about squash skins. Usually squash skins are very tough, even when cooked. If it's no problem for you to eat, then you can usually give it to your turtles. I usually peel the skin off my squash before giving it to the turts.
Cukes have very little nutritional value. More of a filler than anything else. You can give it to them once and a while, but it should not be a staple. You can leave the peel on the cukes if you feed them, since what little nutritional value there is, is stored in the skins.
