How may pellets a day should I feed a turtle between 1 3/4-2 inches. Right now I'm feeding 4 pellets.

4 - 5 is good.
have you ever tried mixing his diet up?

maybe some veggies or fruits? i know hes still small.

I'm getting an anarchis plant when I get my tank this weekend, since he won't eat other veggies, or strawberries and apple skins. If I find a cricket around the house, used to be about every 2 weeks, I'd feed it to him, but I might buy one of those can o' crickets so he'll have some variation.

Depends, what type of pellets and how are they compared with his head? You can try posting a picture, that helps a lot. I think I was feeding my turtle about 3-4 full sized Reptomin (broken in half) when he was 2".

It depends on the size of the pellets compared to the size of the turtle head. Here's a cute thread with some photos showing how to measure the right amount of pellets:
