i usually feed mine once a day should i up it to twice or what exactly is recommended

It depends on what you're feeding. Mine usually get veggies in the morning and some pellets at night. Sometimes a feeding is skipped.

i use pellets what kind of veg like lettuce carrots that sort of thing

I feed pellets 3x per week and lettuce or aquatic plants daily.
