Okay... so I had assumed OmmNom was female but now I'm not sure at all. Today I witnessed Ommy protruding something black from her vent which immediately disappeared when I got close to see what was going on. After doing some research I found out this is called fanning. Is it possible for females to fan or is Ommy really a guy turtle? His/her nails are really quite short still and his/her vent seems to be in between what you'd expect from either gender.... Is Ommy male?

He/she is just under 4 inches

Starting to look like a male, but you also need to cut back on protein/pellets. Was what you saw black and flowery looking?

Now I just got to hope Chibi isn't also a boy... Do you suppose a 300 gal stock tub is big enough for 2 males to peacefully coexist?

Honestly, no. If they want to fight then a 300 gallon will not prevent it. You can divide the tank nicely, so you won't need separate filtration and heating.
